In honour of Shrove Tuesday, we decided to get out our trusty Netherton Foundry crepe pan and whip up some tasty banana pancakes on the Frontier Plus. This is one of the best camping recipes we know and a trusty favourite for breakfasts around the campfire. Our Sustainability Director Holly brought in some eggs from her chickens, and we set to work.
Here's the recipe we used: it's super quick and easy and perfect for camping.
- 2 cups flour
- 4 tsp baking powder
- 1 tbsp sugar
- Pinch salt
- 2 eggs
- 2 cups milk
- 4 tbs vegetable oil
- 4 bananas
Mash the bananas in a small bowl.
Mix up the dry ingredients in one bowl, and the wet ingredients in another. Add the wet ingredients to the dry and fold together, being careful not to overmix.
Heat a little butter or oil in your frying pan and dollop the mixutre into a pan, about a quarter cup at a time. Cook for a couple of minutes on each side, until lightly golden and cooked through.
These are great with a little maple syrup poured on top (our secret camping essential).
