Frontier Friday: South African Sheba

IT'S FRONTIER FRIDAY!!!

Here at Anevay HQ we love food and more than that, we love when it is cooked on one of our stoves - nothing beats the added flavour that cooking on wood-fuelled fire brings. This Frontier Friday we bring you the *most delicious* recipe for a South African favourite - Tomato Sheba. "What on earth is 'Sheba?" you ask. Think a combination of chutney and salsa, with a delicious sweet zing, acting as the perfect accompaniment to rice, cous cous, sausage-in-a-roll, or anything that goes well with a rich and luscious tomatoey mixture. Suitable for vegans and meat-eaters alike, this went down a hit with our team! 

Without further delay, here is our super-easy, only-one-pot-needed recipe:

1kg ripe tomatoes
500g onions
3 cloves garlic
150g light brown sugar
125ml sunflower oil
125ml white vinegar
125ml brown vinegar
25ml apricot jam
7.5ml ground ginger
7.5ml salt
3.5ml mustard powder

Roughly chop the tomatoes, onion and garlic and throw into a (preferably cast iron) pot. We used the Netherton Foundry casserole dish but any pot can be used, although there may some minimal sooting if the base of the pot is exposed to the flame.

Add the rest of the ingredients and heat it all together slowly until boiling point (stir until the sugar has dissolved). Intially, we kept the top plate of the Frontier Plus in place, but then removed it when we needed a bit more vigorous heat. 

Allow the mixture to boil for roughly half an hour, stirring every so often. We lifted a bit of the excess moisture off with a spoon, which left us with a thick, flavour-rich combination. 

The Sheba can be bottled, sealed and stored, however ours was too yummy to not eat straight away - we lathered it on boerewors (South African beef sausage) rolls and 'mmmms' were heard with pretty much every mouthful.
