Burns Night Recipe: Oatcakes on the Fintan Stove

In celebration of Burns Night, we cooked up some oatcakes on the Fintan Stove. They only took five minutes to put together so we thought we'd share the recipe with you.

Scottish Stove-Top Oatcakes

You'll need:

  • 220g oatmeal
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • A big handful of dried cranberries (optional)
  • 1 tbsp butter

Method:

Get your stove nice and hot and place the griddle on top to heat (you can also do these on a griddle pan in your kitchen, or even in a frying pan).

Mix all the dry ingredients together in a big bowl. Melt the butter in a pan and pour it into a well in the centre. Mix it all up together (use your hands!) until it doesn't feel sticky.

Dust a surface with some of the oatmeal and roll out your dough to about 5mm. Cut out shapes using a glass or cookie cutter and gently lift them on to your pre-heated griddle. They are quite crumbly before they're cooked, so take care. Cook for about 15 minutes, then flip and cook for another 15 minutes or so (times may vary depending on the heat of your stove, so keep an eye on them).

Serve with butter, cheese, honey, or your favourite toppings. Tasty!
